SANDY'S PAVLOVA
- 4 egg whites (at room temp)
- ¼ teaspoon salt
- 250g caster sugar
- 2 teaspoons cornflour
- 2 teaspoons white vinegar
- 1 teaspoon vanilla
TOPPING
- 300ml cream
- Mango sliced
- All berries
- Passionfruit pulp
- Mint to decorate
Preheat oven to 150 degrees C. Line a baking tray with non stick baking paper.
Put egg whites and salt in a dry, clean, grease free bowl. Use electric mix master to beat on high till soft peaks form. With whisk going add one third of sugar until it is well combined. Repeat with remaining sugar, adding third at a time, until mixture is stiff and glossy. Sprinkle in cornflour, vinegar and vanilla and use a metal spoon to fold gently until combined.
Spoon the mixture into a circle on the tray and use the back of the spoon or spatula to fill in and build up the sides slightly so filling can fit in the middle. Put in the preheated oven and cook for 1 hour and 15 mins. Turn off the heat and leave the pav in the oven to cool off completely before removing.
Beat cream and add to pav then top with fruit and drizzle generously with passion fruit and decorate with mint leaves.
